Masala Mutton Leg Roast Recipe By Food Fusion (Eid Recipe)

Ingredients:
– Mutton leg 1 ¼ kg (small leg)
– Ginger Garlic paste ¼ cup
– Fried onions crushed 1 cup
– Yogurt 1 cup
– Red Chili Powder 2 tsp
– Black Pepper powder 1 tbsp
– Salt to taste or 2 tsp
– Raw Papaya paste ¼ cup
– Oil 1/3 cup
– Coriander Powder 2 tsp
– Turmeric ½ tsp
– Cardamom powder 1 ¼ tsp
– Salt to taste or 2 tsp
– Whole spice powder 1 ½ tsp
– Water 1 cup

Directions:
– Take a clean leg of mutton which should weigh 1 ¼ kg approx. Remove all the extra fats and Prick well a lot with fork or knife or put the cuts on leg for better absorption of marinating.
– Rub the mixture of raw papaya, ginger garlic paste and salt on mutton leg and leave for 40-45 min and set aside.
– In a bowl add yogurt and all spice and mix well. Pour the marinating over the leg and rub it over well and leave for another 2-3 hours.
– Place the leg in a large pan with oil (1/3 cup) and water (1 cup) in bottom and leave on very low flame for 2 hours almost. Keep flipping the sides so leg and masala shouldn’t get burnt.
– Or Place the leg on greased baking tray, cover with foil and bake at 170 C for 1 ½ to 2 hours (may take ½ hour more) or till meat is fully done.
– Serve Hot.

Ajza:
– Mutton leg 1 ¼ kg (small leg)
– Adrak Lehsun ka paste 4 tbsp
– Tali hue grind piyaz 1 cup
– Dahi 1 cup
– Lal Mirch Powder 2 tsp
– Kuti Kali Mirch 1 tbsp
– Salt to taste or 2 tsp
– Kacha papita ka paste 4 tbsp
– Tel ¼ cup
– Dhania Powder 2 tsp
– Haldi ½ tsp
– Pisi Elaichi 1 ¼ tsp
– Salt to taste or 2 tsp
– Garam Masala Powder 1 ½ tsp
– Water 1 cup

Directions:
– Mutton ki saaf leg lein jo 1 ¼ weigh karti ho us ke saare chiknai nikal lein aur usko achi tarah kaante ya knife ki madad se prick karlein ya cut laga dein.
– Ab is main papita aur adrak lehsun aur namak laga ke 40-45 min ke liye rakh dein.
– Bowl main dahi aur saare masalae shamil karke mix karlein aur raan pea chi tarah mal dein.
– Masale ko raan pe achi tarah laga ke 2-3 hrs ke liye chhor dein.
– Raan ko bare pateela ya pan main ¼ cup oil aur 1 cup pani daal kar bilkul halki aanch pe rakh dein takreeban 2 hours ke liye. Thori thori der main sides palat dein takeraan aur masala jale nahi.
– Leg ko greased baking tray pe rakh ke foil se cover karein aur phir 170 C pe 1 ½ – 2 hours ke liye oven main rakh dein jab tak gosht gal na jaye (baking time 2 hours se zada bhi hosakta hai)
– Garam serve karein.
